Composition: Acipenser stellatus Eggs(Sevruga)
Development process:Le Sevruga is the smallest sturgeons used with the preparation of caviar. This sturgeon only grows very seldom beyond 1.5m and 25 kg. The female arrives mature as of the age of 7-10 years, but the caviar grains are optimum when the female reached age the 20 years (what is increasingly rare to fish them today).
Cut Grain of small size, 1.5 with 2mm.
Color: Clear gray with the dark gray.
Texture: Tender, fine and fragile membrane.
Nose: Certainly caviar more spiced of all the species of sturgeon. Taste: it leaves a delicious iodized taste, with a a light hazel nut softness.
